Flounder is a mild whitefish, like tilapia only with a little more flavor. It was on sale this week at Kroger and so I decided to experiment and it worked out quite well. I ended up going with panko breadcrumbs instead of standard because of their shape -- they tend to make the breading a little crispier which I like on pan-fried fish.

I keep talking about this soup, and it occurred to me that I hadn't posted it yet. I totally stole it from the show Everyday Italian and it goes great with Rachael Ray's garlic bread. The soup could easily be turned into 100% vegetarian if the chicken stock is replaced with vegetable stock or broth.

Super easy homemade soup that goes really well with thick crusty bread (I'm partial to sourdough myself). And, yes, you can totally make this in less than an hour.

EDIT: Yeah, this was totally taken from i_rose_i_roared's mom's soup that I had once. It's pretty close to her recipe, I think.
